Tis the season of gratitude. Harvest season. Thanksgiving. The time for pumpkin everything—and reveling in the beauty of autumn leaves.
What I am grateful for right now is you, my loyal readers, and for all the wonderful health research that comes my way that I can share with you and use to improve my own life.
This month we have the latest research on eggs… and why you might want to avoid them, some great tips on healing autoimmune issues (they worked for me and I hope they will bring you relief too), the value of beta glucan fiber and where to find it, what red light therapy is good for (I haven’t tried it yet, but I’d like to), and finally, how much protein you really need—from real nutrition experts, not industry propaganda.

Are Eggs Really Healthy Foods?
You’ve heard the hype—bought and paid for by the egg industry—telling you that eggs are the perfect food.
Well yeah… for unhatched birds they are perfect.
For humans, not so much. So the short answer is no… a pretty big NO!

A landmark study found eating one egg a day triples the risk of developing diabetes, and consuming just two eggs weekly doubles the risk.

A 2019 study of nearly 30,000 adults over 17.5 years found eating two eggs daily increased heart disease risk by 27%.

This increased risk is linked to TMAO (trimethylamine N-oxide), a toxic compound produced when gut bacteria convert lecithin in egg yolks. High TMAO levels are also associated with a threefold increased risk of rectal cancer in women, suggesting eggs may promote cancer growth.

Eggs contain 186 mg of cholesterol each, making them America’s top cholesterol source, and two eggs supply about 25% of the daily saturated fat limit.

Men who eat an egg every three days face an 81% increased risk of lethal prostate cancer; women consuming five eggs weekly have a significant rise in breast cancer risk.
The good news is that all the nutrients in eggs can be obtained more safely and effectively from plant-based sources without the associated cholesterol, saturated fat, salmonella risks, or ethical concerns.
Are eggs yummy? Sure, but are they worth putting yourself at higher risk of cancer, diabetes, and heart disease? I don’t think so.

Got an Autoimmune Disease?
If you’ve been diagnosed with any of the following, or even suspect you may be dealing with them, take heart: rheumatoid arthritis, lupus (systemic lupus erythematosus), Hashimoto’s thyroiditis, Graves’ disease, diabetes, multiple sclerosis, celiac disease, psoriasis, inflammatory bowel disease (Crohn’s disease and ulcerative colitis), pernicious anemia, Addison’s disease, Sjögren’s syndrome, vitiligo, myasthenia gravis, scleroderma, autoimmune hepatitis, alopecia areata, vasculitis, polymyositis, or dermatomyositis.

- 🥦 Eat plenty of cruciferous veggies (broccoli, kale, cabbage, cauliflower)
- 🍓 Add antioxidant-rich fruits, especially wild blueberries
- 🍄 Include mushrooms (button, shiitake, maitake, reishi) for immune balance
- 🧅 Enjoy onions, garlic, and leeks to support gut health
- 🥬 Load up on greens and colorful vegetables for antioxidants and fiber
- 🫒 Avoid oils, but extra-virgin olive oil is the least harmful in small amounts
- 🥒 Fermented foods (chickpea miso, plant-based yogurt) might help to restore gut bacteria, but prebiotic foods are even better, i.e.: Garlic, onions, leeks, asparagus, Jerusalem artichokes (sunchokes), chicory root, dandelion greens, green bananas, plantains, apples (with peel), oats, flaxseeds, seaweed, raw cacao, cooled potatoes.

Beta Glucan—Immune Booster & More
Think of Beta‑glucan as the quietly heroic fiber your body loves: it’s a soluble, fermentable fiber found in things like oats, barley, certain mushrooms, yeasts, seaweeds and algae.
Because it forms a kind of gel in your gut, it slows down sugar absorption, helps regulate cholesterol, and gives your immune system a boost.
Here’s what you can expect when you add beta-glucan into your diet:
- better blood sugar control
- healthier cholesterol and blood pressure numbers
- a fuller feeling after meals (meaning less grazing)
- immune-support benefits that show up in both gut health and overall resilience
It works in two main ways:
- it becomes viscous in your gut, slowing digestion and sugar spikes
- it gets fermented by gut bacteria into short-chain fatty acids that deliver metabolic and immune support

Red Light Therapy Benefits
I’ve been hearing a lot about red light therapy lately, so I decided to learn more about it and share it with you.
Red light therapy (also known as photobiomodulation) is basically a way of bathing your cells in gentle red and near-infrared light to help them make more energy.
It works by stimulating the mitochondria—the tiny power plants inside every cell—so your body can heal, repair, and rejuvenate itself more efficiently.
According to Natural Remedy Ideas, this simple, non-invasive therapy can help with everything from easing pain and inflammation to improving skin tone and elasticity.
It is claimed to boost collagen, smooth wrinkles, speed up wound healing, and even help muscles recover faster after exercise.
Some people use it to sleep better, balance hormones, lift their mood, or give their energy a noticeable boost.
It’s also been shown to support thyroid health, brain function, and hair growth—basically giving your body a gentle nudge toward greater vitality. (I’ve seen several articles supporting the hair growth claim.)

Protein—How Much Do You Really Need?
There’s a lot of media confusion out there about protein, but what’s the real truth?
Here are two doctors who actually know a whole lot about nutrition, giving you the facts. Dr. Barnard is a particular favorite of mine—not only an amazing doctor, but an all-round amazing guy.
